Ingredients:
4 salmon filets (about 2 inches wide)
5 or 6 scallions (chopped)
1/3 cup cilantro (or dried if fresh is not available)
1 – 2 lemons (cut into thin slices, pits removed)
2 Tbsp sesame oil
2 Tbsp minced ginger
1/3 cup of mirin (Japanese sweet soy sauce)
¼ cup soy sauce
Directions:
- Rinse salmon filets and pat dry. Set aside a small handful of scallions. Mix rest of scallions and cilantro and put on a baking sheet in 4 little, long piles (the salmon fillets will rest on top of these). Top each pile with 2 to 3 lemon slices, lengthwise.
- Mix together sesame oil and ginger and spoon about 1 teaspoon over the top of the lemon and scallions, reserving the rest.
- Top each little pile with a salmon filet. Add the mirin and the soy sauce to the sesame oil and ginger and mix well. Spoon this equally over each salmon filet.
- Put the salmon about 4 to 5 inches under the broiler until nicely browned, about six to eight minutes. Garnish with the reserved green onions and serve with rice.
