R5 Made-to-Devour Sandwiches

Whether he was cooking Sunday dinners for 25 college buddies at Ohio Wesleyan or working at Cape Cod lobster shacks boiling chowders and steaming lobsters, feeding large groups has always come naturally to 28-year-old Eric Korn. The Peekskill resident and French Culinary Institute graduate, who has operated Good-Life Gourmet catering for the past two years, has opened two Good-Life Gourmet Sandwich Shops (108 Main St, Irvington 914-478-8080; 13 Spencer Pl, Scarsdale 914-723-3024). Among the sandwiches: butter-poached lobster salad, chipotle steak and cheese, house-roasted turkey breast with wild mushroom stuffing; tomato- and herb-braised brisket with caramelized onion; and falafel with hummus and minted tziki sauce. The sandwiches, which range in price from $7 to $11, are served with carrot sticks and roasted garlic hummus or Israeli couscous salad. Korn is planning to also offer takeout heat-and-eat meals (costing from $12 to $16), such as French-style roasted chicken, pan-roasted halibut with mango salsa, and wild-mushroom lasagna. Oh yes, Korn will be employing about 15 young men and women from Westhab, a county program that provides, among other services, employment training for at-risk youth.
