Favorite Cuisine…Indian, of course!
Culinary Hero…Our consultant chef, Hari Nayak. He is young, very creative [graduated at the top of his class from the CIA in 1998], and has been successful as a restaurateur, author, and food-service consultant. Nayak trained under Albert Adria of El Bulli and Marcus Samuelsson of Aquavit.
If Not a Chef, I’d Be a…chef. It’s my life!
Favorite Kitchen Utensil…A good, sharp knife. Wüsthof knives are the best.
Last Book Read…I have no time to read.
On a Day Off, I’d Likely Be…I would like to be fishing (although I probably wouldn’t be).
I Never Eat…I am Muslim, so no pork. I never cook it, either.
Favorite Place to Dine Out…Curry in a Hurry in Manhattan. They make a great goat curry.
I Hate It When a Diner at My Restaurant…comes into the kitchen when I’m busy!
Favorite TV Show… Khana Khazana on Zee TV [the longest-running and most popular cooking show in the history of Indian television].
What Waiters Should Never Do…Tell me how to cook!
The Strangest Request Ever Received from a Diner…Ketchup for their tikka masala! There is no ketchup in my kitchen!
The Most I’d Pay for a Meal…One hundred dollars. There is no reason to ever pay more that that for a good meal
Favorite Pain Reliever…Tylenol. It’s a must in the kitchen.
