The Sous Chef at Bistro Rollin is Eric Charles Mauro. Eric was born in Brazil and graduated from the Culinary Arts School in Sao Paolo. His first restaurant experience while in college was in neither a Brazilian or French restaurant but in a German one, the Braugarten! Following graduation Eric pursued a specialized course in Brazilian cuisine in Senac College also in Brazil. In 2007 he received the great honor of being selected for an internship in the kitchen of Martin Berasategui, a three-star Michelin restaurant in San Sebastian, Spain. This prestigious restaurant has received wide recognition for it’s modern and inventive international cuisine. The internship program is highly competitive and required person all recommendations from thirteen chefs with whom Eric had worked. After completing the three month internship, Chef Berasategui asked him to continue to work in his kitchen for a full year. Eric accepted and for the next nine months worked in all defined stations of the kitchen. Eric considers this work with one of the world’s most celebrated chefs to be a defining experience in his young culinary career. |
In 2008 Eric came to New York to work as a chef’s assistant in the Executive Dining room of Citicorp. In 2009 when Chef Lozano was putting together his kitchen staff for Bistro Rollin he recruited Eric as part of the original team where he continues to delight guests with his skill, creativity and passion.
