Dish I Do Best My favorite dish is the assaggio appetizer, which is a sampling of my specialties. It allows me to stray from seasonal menu items and provide guests a sampling of new, creative tastes, such as pan-seared scallops served with braised cabbage and pancetta, fried zucchini blossoms, and fennel-crusted tuna.

Drink of Choice Trevi’s bartender, Franco, makes the most amazing Blancito. It’s his own creation, a mix of one-hundred-percent blue agave tequila and muddled mint. Don’t let the smooth taste fool you. A few of them will knock you off your feet.

Favorite Cuisine Italian, of course. I guess when you grow up surrounded by homemade Italian cuisine, nothing else compares.

Culinary Hero My mom. I was always amazed how she, along with my grandmothers and aunts, created feasts for fifty-plus family members on a four-burner stove and one oven.

If Not a Chef, I’d Be… An NFL football coach. I always admired Bill Parcells and his coaching style.

Last Book Read Green Eggs and Ham by Dr. Seuss. My two-year-old daughter loves when I read to her.
