Tarry Market gets a lot of props for its sandwiches. We’ve already covered their popular porchetta sammy, and the truly amazing Joe B’s Burger that’s available on weekends only, but there’s another sandwich here that should be given way more props when discussing Westchester’s best meat-and-bread combos.
The sandwich I’m talking about isn’t a panini — although they’re damn good — it’s the porcini-rubbed prime rib. Its composition is relatively simple; a hunk of prime rib gets generously rubbed with a ground porcini mushroom spice blend, then it’s slow-roasted on a rotisserie until it’s a perfect rare to mid-rare, then rested to lock in the meat’s natural juices. When it’s sandwich-building time, the melt-in-your-mouth prime rib is sliced not too thin, but not too thick either, and you get enough tender, flavorful beef fat for added gluttonous pleasure. All that juicy steak is piled stacked on crusty, chewy Italian bread, and dressed up with Maldon sea salt flakes, pepper, scallions, and a drizzle of EVOO. What Tarry Market has nailed here, besides simplistic perfection, is the ratio of meat to bread. There’s not too much dough, but just enough of it to soak up the prime rib drippings, and it’ll hold up throughout your sandwich eating session.
A porcini-rubbed prime rib sandwich will run you $13, and slightly over $16 if you add an Italian soda or Mexican Coke. It’s likely not an everyday indulgence — although I could eat one every week — so if you want to up your spending, and up your prime rib sandwich experience, do the proper thing and add on a glass of red or a bottle of beer.
