The Vanderbilt Grace

Dine: To make the butter-poached smoked lobster, chef Cartwright uses a medical device designed for administering marijuana, delivering just the right amount of smoke for a delicious kick.  Cheddar-glazed beef tenderloin with a pancetta Merlot sauce was perfectly tender; the cinnamon-sugar beignets, impossibly light. 

Insider’s tip: After a day exploring the town, make sure to make it back to the rooftop deck in time to catch the sunset over the marina.
