The Oath Beer Sanctuary Opens In Tarrytown

And waffles are all over the menu.

The Oath Craft Beer Sanctuary in Tarrytown, a new restaurant from the owners of The Craftsman Ale House in Harrison, displays its 20 draft picks on a large TV above the bar (the screen is linked to their beermenus.com page for quick updates). Sometimes there’s a game on TV, but basically the beer is the game.

Even if you’re a draft beer snob like me, make a point of perusing your paper menu of more than 100 bottled beers, with headings like Sour/Funky, Trappists, and Cider/Mead/Gluten-Free. The selections printed in red are about to run out, noting how many bottles are left. Or just ask your friendly bartender which beers people are going crazy over, what’s sitting, and which bottles are least likely to show up again soon.

The Craftsman is known for burgers and wacky beer-battered desserts, most famously the beer-battered Twinkie. Oath is not identical—it serves more non-burger dishes (steak frites, poutine, croque-monsieur)—but it has its own quirks, including having waffles in almost every section of the menu. Below, some highlights:

Waffle-bun burger: I don’t know why I’ve been a wacky-burger magnet lately. The Oath Burger (pictured top), topped with bacon and a fried egg, is served between two chewy, sweet Liège waffles, with maple syrup on the side. Ground beef plays breakfast meat like the new kid trying to join a game of kickball, but all elements are delicious—dissect or combine as you will.

Mac ‘n’ cheese with pulled pork and Belgian waffle croutons: Tucked into your cheese-oozing shells is not only house-made, dripping-basted pulled pork, but cushiony croutons that started their lives as waffles. They seem to be at home here. We’ll let them stay.

Beer-battered chicken and waffles: Belgian beer, Belgian waffles, and the time-honored tradition of chicken and waffles. If you’re not down with this, I point you toward the Buffalo wings; my neighbor’s looked so good I may just have to go back for them.

Belgian waffles with ice cream: If I were going to Oath today, I would pair this with Southern Tier Choklat Oranj, brewed with chocolate and orange peels. But it probably won’t be there by the time you’re reading this.

Waffle fries: This may be, um, pressing a point. But even the fries list—eight varieties, with see-ya-tomorrow dips such as horseradish cream sauce, roasted garlic aioli, and brown gravy—includes waffle fries, one of the only non house-made menu items (along with tater tots).
