Take a Peek Inside White Plains’ New Brewery

Go crush a few pints at the taproom at Wolf & Warrior Brewing Company.

Mike Chiltern used to produce reality TV, documentaries, news segments, and made financial-marketing videos for Morgan Stanley. Now? He’s a brewer. Correct that, he’s been a decorated homebrewer for a number of years, having won or placed in every brewing competition he’s ever entered.

Chiltern, who was born in Purchase and currently resides in White Plains, says, “I felt there was a need for a brewery in a major metropolitan city in Westchester.” Now there is one. Wolf & Warrior Brewing Company is named after his sons, Vuk (means “wolf” in Serbian) and Branko (translated to “defender,” but adapted to warrior).

Wolf & Warrior has an unpretentious vibe and is just what Chiltern envisioned. “It’s the kind of place I had gotten used to when I lived in Astoria and Williamsburg,” he says. “It’s laid back, and we want to keep it that way.” FYI, there’s Jenga, checkers, decks of cards, Battleship, and Connect Four should the mood strike you.

Wolf & Warrior’s beers are brewed onsite, so you’re free to venture downstairs to check out the equipment, and if you’re lucky, you’ll get to watch some of the brewing process. Chiltern plans to add private-event space and a small patio for when the weather warms up. The brewery is child friendly, so bring the littles ones, but pets are only allowed outdoors come patio season.

 

Since the brewery just opened a week prior to the Super Bowl, only six of their 16 taps are occupied. In a few months, Chiltern says they should be at full capacity. Not a beer drinker? They’ve got a handful of different wines, and cider from Diner Brew Co. in Mount Vernon.

The beer is solid. Don’t skip the flagship imperial IPA, the double-dry-hopped Wolf of White Plains, full of tropical and citrus notes with a touch of hoppy bitterness. For something lighter, try Patagonia, a blonde ale with a pilsner-like quality that goes down oh, so smooth. Into the West is the brewery’s tribute to a classic West Coast-style IPA; it’s piney with a clean finish.

 

There are some tasty options to pair with your pint, from hummus, empanadas, falafel, and a Cubano sandwich to sausage from The Meat Hook in Brooklyn.
