Spice up an otherwise drab Thursday this summer with an opulent evening at Tarrytown’s Castle Hotel & Spa.
Known for its high-level luxury and killer Hudson River views, this century-old landmark hosts lavish Poolside Pairing parties for 10 weeks, from July 4 through Labor Day, at its pool and grotto. Each event runs from 6:30 p.m. to 8:30 p.m. and the cost for most events is $85 ($75 for hotel guests).
The parties revolve around a specific, fun theme — unlimited themed drinks are included (a cash bar is available if guests want to sip on something different). Passed or stationed hors d’oeuvres also offer elevated culinary interpretations of the theme. Tonight’s Take Me to Tuscany event serves up cantaloupe-and-tomato tartlets with goat cheese mousse, prosciutto-wrapped asparagus, mozzarella and pesto chicken pizzette, and ham-and-pea arancini.
Next week’s Flamenco Dance party will feature grilled lamb merguez with harissa aioli and pickled pepper salad, grilled prawns with saffron galette and pea purée, and vegetable skewers with chimichurri. Don’t miss the Moët Ice White Party on August 1, complete with a raw bar of Atlantic oysters, littleneck clams, and shrimp cocktail. General admission for this event is $115 per person.
No need for a bathing suit, as recommended attire is cocktail, so dress to impress. (Castle doesn’t permit use of the pool during these events, but does offer monthly weekday memberships for $325/month.) But make sure to you bring your dancing shoes: DJ Theo Philip Entertainment will be bumping beats all night long. Reservations for these fab parties are highly recommended.
