The homemade parfait. It’s one of those rare, idealized breakfast items that you wish you made every morning: healthier than cereal, sweeter than eggs… But the homemade version always seems to be missing those extra details—a surprise layer of honey, or a sprinkling of nuts. So we reached out to Balducci’s in Scarsdale (also in Riverside, Connecticut), for a definitive answer to the “How do I make a parfait like they make it?” question. They answered with The Healthy Breakfast Berry Parfait:
Yields: 4 Serving
Ingredients:
4 cups nonfat Greek yogurt
2-3 cups assorted Balducci’s fresh berries—blackberries, blueberries, raspberries, and golden raspberries
1/2 cup fresh Balducci’s Orange juice
1 Tbsp orange zest
1/2 cup chopped, toasted walnuts
1/4 cup toasted almond slices
2 Tbsp chia seeds
2 Tbsp honey
4 fresh mint leaves, for garnish
Instructions:
1. Marinate berries with orange juice and zest
2. Divide yogurt, fruit, and nuts between glasses. Drizzle each with 1/2 Tbsp honey and top with Chia seeds
