A Meal in a Muffin

For a boost of protein, you’ve no doubt resorted to drinking different types of shakes or choosing from an endless variety of protein bars. But what about getting protein from a muffin? Debbie and Zach Schleien, a mother and son from New Rochelle, have created LIFT Protein Muffins, which serve as a gluten-free meal replacement that correlates with the Paleo diet.

Zach, who transformed his life by starting the Paleo diet, began experimenting with baking a Paleo meal replacement muffin with his mom. After hundreds of hours of research and taste testing, they succeeded. “My mom and I started LIFT Protein Muffins to share our love of health and nutrition,” says Zach, a certified health coach. “We wanted to fill a need for people who are into eating healthy but also want the convenience of an on-the-go meal.”

Each muffin boasts 18-19g of protein. They also contain no artificial flavors, colors, or sweeteners. LIFT Protein Muffins currently come in three flavors: apple cinnamon, banana chocolate, and chocolate zucchini. But their most popular order is the Sampler Pack, which consists of two of each flavor. Some of the all-natural ingredients include coconut flour, coconut milk, eggs, nuts, fruits, vegetables, and grass-fed whey protein.

These filling — and delicious — muffins can be kept frozen for up to six months, though we doubt they’ll go uneaten for long. After being heated in either a microwave or an oven, you will be treated to a light, fluffy, fresh muffin packed with flavor and none of the low-grade ingredients of many commercial baked goods.
