Albert DeAngelis, executive chef of Z Hospitality Group (Mediterraneo’s parent company with eight restaurants in Fairfield and Westchester) since 1993, along with Mediterraneo executive sous chef Matthew McNerney, have crafted a summer menu that utilizes lots of fresh produce, myriad spices, and influences from around the Mediterranean and beyond.
Corn, zucchini, tomato of all kinds, eggplant, figs, stone fruit, lobster, swordfish, wild striped bass, pork, squash blossoms, string beans, marjoram, mint, and basil are summer ingredients Chef DeAngelis favors. “I try to stay away from cream and butter as much as possible year round.”
