Wolf & Warrior Brewing Company Relaunches Its Food Menu

Hand-cut fries and brisket blend burgers are among the offerings at the Wolf & Warrior Brewing Company in the heart of Westchester.

Taken on a tour of the 3,500-square-foot Wolf & Warrior Brewing Company, past the fermenters and into the grain room, you’ll hear everything about the beermaking process by owner Mike Chiltern, his sense of genuine pride and passion evident. This is a man who loves his vocation.


The father of two (the business is named after sons Vuk and Branko, “wolf” and “warrior” in Serbian) opened the brewery in January 2019, having been a homebrewer since 2012. The five-barrel-capacity brewery offers classic American and West Coast India Pale Ales, New England IPAs, Kolsch-style ales, Blonde ales, German lagers, fest biers, Stouts, Porters, Saisons, and Hefeweizens, with 80% of the grain and 40% of the hops for the brews grown in New York State.

The pours (typically 16) are from-scratch recipes — Chiltern has won medals in numerous homebrew competitions, including the National Homebrew Competition. The crisp, light Patagonia Argentinian Golden Ale, the hoppy Wolf of White Plains IPA, and the smooth Horseman’s Pumpkin Ale, are three that are especially well received.

To match the quality of his beer, Chiltern recently refashioned his food menu. Chicken tenders and Russet fries are now hand-cut; pork shoulder for the Cubano is marinated 12 hours and slow-cooked for three; four burgers’ varieties are made with a brisket blend; pickles hail from Doc Pickles; and birria tacos, filled with slow-braised beef short rib and served with a birria consume, were added to the bar plate options.


Added to grow along with the hops out in the rear beer garden are fresh herbs including rosemary, basil, and parsley to be used in the kitchen. Dessert is via mega-stuffed cookie baker Baked in Heaven of White Plains. “We’re known for our beer,” says Chiltern, “but I want people to get to know and remember our food too.”
