Test-Kitchen Techniques: Reheating Leftover Pizza

Microwaving it is gross. Don’t do it.

We get it: After a long day at work, nothing sounds more appealing than getting dinner from fridge to plate in two minutes flat. That being said, reheating leftover pizza in the microwave just doesn’t work. Somehow, it manages to be soggy and pick up all kinds of weird aftertastes. Trust us, there’s a better way.

We tested some of the most popular methods for warming up slices anew, including stove-top skillets and various durations and temperatures in the oven. Ultimately, we took inspiration from vintage local pizza joints, where throwing slices into a hot oven gets the bottom crust nice and crisp and the cheese gooey and bubbling. It requires almost no exertion, and the ensuing 10 minutes while it bakes are just long enough to change into pajamas, uncork a bottle of wine, and browse your Netflix queue.

The Method: Place a sheet pan on the middle rack of your oven and preheat it to 400 degrees. Put slices directly on the hot pan and cook until the bottom is crisp and the cheese is bubbly, about three to seven minutes depending on your oven and the size/thickness of the slice.

Bonus tip: You can line the sheet pan with foil before it goes in the oven. It’s not quite as effective, but sometimes absolutely no cleanup is worth it, right?
