Ingredients:
3-4 large sweet potatoes (choose different types for taste and visual variety
2 medium yams or sweet potatoes, sliced
1/2 stick butter
1/2 teaspoon ground chili power or chipotle powder
1/2 teaspoon cinnamon
1/2 cup pure maple syrup
1 tablespoon honey
Salt and pepper to taste
Instructions:
Preheat the oven to 375 degrees
Thinly slice sweet potatoes into desired size. Toss with a drizzle of olive oil, salt, pepper, honey, cinnamon, and chili powder.
Arrange in a baking dish, overlapping in rows. Slice cold butter into small pieces and arrange evenly on top of the potatoes and drizzle with maple syrup.
Cover with tin foil. Baste with liquid often to prevent drying. Cook until fork tender- approximately 40-45 minutes.
Remove and baste. Place under broiler until edges become crispy and brown. Serve immediately.
