Another level of bacon-cheeseburger nirvana is reached at this gourmet breakfast-and-lunch café (which, as of press time, was planning to have expanded next door with a full-service restaurant). The thick-cut, house-cured slab bacon is some of the best you’ll encounter. Plus, rendered bacon fat is used to cook an 80/20 short-rib-brisket patty on a flattop, infusing the burger with an extra hit of porky, smoky flavor. Thick-cut bread-and-butter pickles, made in-house, add sweetness, aged cheddar provides mild funk, and smoked lardo slathered on a slightly chewy Portuguese bun before toasting gives an extra bit
of unctuousness.
