Roasted Autumn Vegetables and Coach Farm Goat Cheese at Tarry Lodge in Port Chester, NY

Admitted. That October snowstorm was really uncool, especially for the thousands of residents who struggled along without power for, well, forever. But there are some things that we still love about autumn, including cozy dishes like this that unite roasted butternut squash, powerfully fragrant pumpkin oil, and crunchy pumpkin seeds. Take a bite of a tangy, goat-cheese crostini and mix it with the sweet, caramelized goodness of the roasted vegetables. It’s probably not as great as your first home shower in a week, but it’s good enough to draw a kindlier eye toward autumn.
