While the Easter Bunny can be counted on to fill baskets with chocolate eggs and marshmallow chicks, he’s not likely to bring a showpiece dessert to your dinner table. For that, hop on over to these inventive Westchester bakeries, which are cooking up Easter treats to add heightened festivity to your Easter feast.
Easter-Explosion Cake and “Wrecking Ball”
Naturally, the sweet shop that sells “freak shakes” goes all out with Easter confections. SugarHi’s bunny and chick “surprise inside” cakes erupt with candy and sprinkles when cut open. Choose from vanilla, chocolate, or rainbow cake layers in two sizes. Also on the menu is a chocolate “wrecking ball,” a hollow chocolate semi-sphere filled with candy that the kids (or adults) smash open. Not into smashing? The shop is also offering decorated Peeps sugar cookies and Easter egg Krispie treats.

Giant Bunny Yodel and Lemon-Curd-Stuffed 100-Layer Donut
This new kid on the block opened in November, and for its first Easter is offering a Giant Bunny Yodel Cake Roll — a chocolate sponge roll filled with vanilla-marshmallow whipped cream and topped with chocolate ganache. The shop will also have all-vanilla Easter Chick Cupcakes and a spring-appropriate lemon-curd-stuffed 100-layer donut. Mini tulip cupcakes, Robin Eggs coconut cake, and daisy lemon tarts round out the springtime offerings.

Design-Your-Own Easter Egg Kits
A relative newcomer, Flowerbake by Angela started spicing up downtown Pelham in early 2018, adding both tasty treats and charm (plus a new birthday-party destination) to Fifth Avenue. Easter offerings include a bunny cake and Easter-themed cupcakes, but the star of the menu is the DIY egg-cookie kit, which includes three sugar cookies and a set of edible markers that can be used to draw your own designs. Though these are billed as an offering for kids, we have a feeling the adult kids in the room could have just as much fun. Cookies decorated by the bakery are also available for those less artistically inclined.

Scratch-made Easter Cake
Those following a strict diet needn’t pass up a decadent dessert this Easter with a little help from By the Way, which specializes in gluten- and dairy-free confections. Options include the Easter Layer Cake (available in chocolate or vanilla) adorned with a fondant bunny and Easter egg sprinkles; Lemony Lemon Cake, filled with lemon curd and topped with lemon frosting; and Spiced Carrot Layer Cake, replete with carrot flecks and a tangy white frosting.

Italian Easter Traditions
While confections like chocolate bunnies and assorted cookies will be offered, the standouts at Teresa’s are reflective of Italian Easter tradition. Teresa’s husband and co-owner, Giulio Darmetta, got his start working at an Italian bakery at the age of 12. (The couple has another location is in the Bronx.) No Italian Easter feast is complete without pizza rustica, a tall-sided, salumi-studded quiche with a pastry top; challah-like egg bread wrapped around a hard-boiled egg; and pastiera, also known as Italian wheat pie, a mildly sweet grain confection. They’re also doing an Easter version of struffoli, a tower of small balls of fried dough held together by honey drizzle and adorned with colored sprinkles.
