Get Your Parm on With This Tasty Food Truck

A new Mount Vernon-based food truck serves classic, Italian-American style wedges.

Michael Paolercio and Christian Prior, both Tuckahoe residents, use their mother’s collective recipes as the inspiration for the menu on their Mac’s Food Truck, serving Italian-American comfort food including sausage and pepper, chicken cutlet parm, and meatball parm wedges. In addition to the aforementioned wedges, the pair is developing an eggplant parm wedge. All bread and breadcrumbs they use come from the much-admired A&M Bronx Baking.   

They debuted Mac’s in spring of 2018 after finding a trailer in Florida that they outfitted and — $50,000 later —  worked events such as the Bronxville’s Memorial Day Country Fair and the Tuckahoe Summertime Fireworks show. It wasn’t until Eastchester-Tuckahoe Summer Fest however, where they served approximately 300 people, that they felt they could make a real go of the food truck business.

The duo grew up in Bronxville and has known each other for 25 years. “We met because our moms hit it off as they were both Italian and there weren’t too many Italians in Bronxville,” says Paolercio. “Chris and I ended up playing the same sports in school so were always around one another.”

Prior has a food industry background, with a degree in restaurant management from the Institute of Culinary Education (ICE) in Manhattan, and former managerial positions at Shake Shack and Manhattan’s Public House Group. He works fulltime at Mac’s, while Paolercio has a “day job” in jewelry wholesale. “But the truck is my passion project,” Paolercio explains.

“One of the biggest challenges of operating a food truck,” says Paolercio, “is finding a location. The towns are tough with permitting, as they want to preserve the business for brick and mortar restaurants. The cities are a bit easier to get a permit.”

Another challenge according to Paolercio: “Fitting two, 200-plus pound guys in an 80 sq ft truck.”
