An ultra-popular street food in Vietnam, pho is the noodle soup you might not know you’re missing. The rich bone broth, perfumed with spices like cinnamon and star anise, is everything you want a cold day, but don’t mistake this for a one-note noodle soup. Traditional garnishes — including hot chilies, fresh herbs, and zingy lime — add a tantalizing complexity that makes the soup utterly addicting. And thanks to the opening of new Vietnamese restaurants over the past couple years, pho is ready for its moment in Westchester’s spotlight. Here’s where to find it.
The Banh Mi Shop

Though the name of this Vietnamese shop references the country’s popular sandwich — meat, vegetables, and plenty of cilantro tucked into a cottony baguette — it’s not the only thing on the menu. You’ll also find eight types of pho, including classic beef, chicken, vegetarian, and seafood, with most priced under $10.

Pho Corner Bistro

This tiny Bedford Hills spot offers a full menu of Vietnamese fare, but as the name suggests, its fragrant pho is a point of pride. Try any of the rich beef broth options, spiced with traditional cinnamon and star anise, served with a variety of fresh garnishes, including cilantro, sliced jalapeño, basil, and lime.
Saigonese

Two types of beef pho go full authentic at Saigonese, with proteins including brisket, eye round, tripe, and tendons. If you’re not up for that, no worries. The menu also includes a light chicken pho with scallions and cilantro, and a veggie version with mushrooms, broccoli, snap peas, and bamboo shoots.

At one of our favorite county Vietnamese spots, owner Tuong Bui creates expertly executed version of the dishes he grew up with in Vietnam. That includes the five versions of pho, which strike just the right balance of rich, aromatic broth, noodles, meat, and fresh garnishes.
