Sarah Pyles proudly owns her 4’11” height. And while she may be small in stature, this bartender/beverage director in Port Chester thinks big for her creations and her events.
Pyles can be found behind the bar at Rye House and creates the cocktail program there and at two other Our House Restaurant Group restaurants: Station House and Village Beer Garden. The Culinary Institute of America graduate has taken her passion for ingredients and seasonality and translated it to the bar scene. “Each place has a different concept and appeals to different people,” Pyles says. She describes what she’s doing at Rye House as “high-end cocktail mixology.” All the infusions are homemade, and so are many of the ingredients. At Station House, Pyles says she brings “an unusual spin to the classics,” while at the Beer Garden, the only cocktails on the menu are punch-style selections.
Pyles is bringing her creativity to events at the restaurants, as well, whether they be late “Last Stop” parties outdoors at the Beer Garden or spirit tastings in the basement at Rye House. “One of my favorite things about this industry is that there are so many things you can do — change is good,” she says.
