Make This Pickled Summer Cole Slaw to Amp up Your Barbecue

With a zingy pickle flavor and fresh vegetables galore, this cole slaw is the perfect complement to rich and saucy barbecue fare.

Find pickled celery at European and specialty markets. If it’s not available, you can substitute the same quantity of high-quality bread-and-butter pickles. As for what to serve it with, check out any of the recipes below for the perfect summer barbecue spread in Westchester.

Pickled Summer Cole Slaw

Serves 4


8 oz jar pickled celery, drained
1 fresh parsnip, peeled and julienned
5 oz fresh radishes, julienned
1 head Napa cabbage, thinly sliced
3 Tbsp tamarind
2 Tbsp cider vinegar
1 Tbsp mayonnaise
Salt and pepper to taste

Combine celery, parsnips, radishes, and cabbage in a large bowl. Add tamarind, vinegar, and mayonnaise, and toss until everything is well coated.

Season with salt and pepper to taste.
