Make This Pickled Summer Cole Slaw to Amp up Your Barbecue

With a zingy pickle flavor and fresh vegetables galore, this cole slaw is the perfect complement to rich and saucy barbecue fare.

Pickled Summer Cole Slaw

Serves 4

Ingredients

8 oz jar pickled celery, drained
1 fresh parsnip, peeled and julienned
5 oz fresh radishes, julienned
1 head Napa cabbage, thinly sliced
3 Tbsp tamarind
2 Tbsp cider vinegar
1 Tbsp mayonnaise
Salt and pepper to taste

Method

Combine celery, parsnips, radishes, and cabbage in a large bowl. Add tamarind, vinegar, and mayonnaise, and toss until everything is well coated.

Season with salt and pepper to taste.
