Paulies And Crafty ‘Cue Prep BBQ Pop-Up

The Pleasantville bar and Mount Kisco BBQ joint plan menu flashing new ideas on traditional fare.

Whether to create a buzz or to try out new dishes, more and more county restaurants are delving into offering pop-ups, or temporary dining experiences. The latest blink-and-you’ll miss it eatery is taking place at Paulies in Pleasantville on May 20-21, where Mount Kisco-based Crafty ‘Cue Catering will be offering an original a la carte menu that reflects their motto of “new ideas on traditional barbecue.” (Crafty’s Pitmaster, M. Timothy Bucolo, studied the foundations of barbecue from World Champion Pitmaster Myron Mixon and is also a certified judge for the Kansas City Barbecue Society.)

Starters include smoked-fried chicken wings, honey-maple pork belly with cherry smoke, and “spud puppy” nachos. Main dishes to choose from are a North Carolina pulled pork sandwich topped with tri-cabbage slaw; a house-smoked pastrami Reuben with Muenster and chipotle Russian; and Kansas City-style spare ribs. For dessert: smoked chocolate mousse with smoked salt and cracker jack crumble.      

The Saturday night dinner will also boast a live cover band.

Paulies is planning on hosting these pop-ups once a month, so expect more delicious weekends in the future.
