Not Just Katsu-Don: Fuji Mart's Ramen is Fantastic, Too

Ramen, those delectable, soft noodles in a variety of broths, is a source of nutrition and nirvana at Ramen Qs at Fuji Mart (816 White Plains Rd, Scarsdale 914-472-1468). The best of the bunch is the tonkotsu shio (salt) ramen—Berkshire pork bones are boiled for hours and then scallions, menma (fermented bamboo shoots), kikurage (wood-ear mushrooms), sliced pork, and noodles are added. The result is a rich, velvety meal-in-a-bowl. ($9 à la carte; $12 as a combo with a side bowl of Japanese curry and rice)
