Make This Pickled Summer Cole Slaw to Amp up Your Barbecue

Find pickled celery at European and specialty markets. If it’s not available, you can substitute the same quantity of high-quality bread-and-butter pickles. Serves 4

8 oz jar pickled celery, drained
1 fresh parsnip, peeled and julienned ​
5 oz fresh radishes, julienned​
1 head Napa cabbage, thinly sliced
3 Tbsp tamarind
2 Tbsp cider vinegar
1 Tbsp mayonnaise
Salt and pepper to taste

 

Combine celery, parsnips, radishes, and cabbage in a large bowl. Add tamarind, vinegar, and mayonnaise, and toss until everything is well coated.

Season with salt and pepper to taste.
