La Fresca Salad

(Serves 6)

1 jicama, peeled and cut into small dice 
2 mangoes, peeled and cut into medium dice
2 cucumbers, peeled, seeded, and cut into medium dice 
½ watermelon, peeled and cut into medium dice
Zest and juice of 2 limes
1 tsp chili powder
4 sprigs cilantro, finely chopped 
1 tsp salt
8 oz watercress

In a large bowl, combine the jicama, mango, cucumber, and watermelon. Season with lime zest and juice, chili powder, cilantro, and salt. Mix well and refrigerate until ready to serve. Add watercress right before serving.
