Inspired by Cypriot lamb sausage, Chef Michael Psilakis seasons his lamb blend (there’s a little pork in there, to keep things rich and juicy) with coriander, cumin, fennel, garlic, and herbs. He takes it one step further by slathering it with a generous amount of his game-changing whipped feta spread, which combines the tangy cheese with sweet red peppers, pickled aji amarillo peppers, charred onion, and basil.
