The last time a distillery operated in the county, Babe Ruth was playing baseball and the U.S. consisted of 48 states. Ed Tiedge, a former hedge-fund portfolio manager from Pelham, has put an end to the county’s absence of any distillery with the opening of StilltheOne Distillery (1 Martin Pl, Port Chester 914-217-0347). The 2,000-square-foot facility produces COMB Vodka, COMB 9 Gin, and COMB Brandy, and is one of the few in the country to distill spirits using a honey base. “Using honey lends a smoother taste,” says Tiedge, who honed his spirit-making skills at Domaine Matuschka, a small winery and cognac distillery in Archaic, France. Comb products can be found at six county wine shops (among them, The French Wine Shop in Pelham, VINO 100 in White Plains, and Ralph’s Wine & Spirits in Rye) as well as Sonora in Port Chester, Caffe Regatta in Pelham, and Elements in White Plains ($35/25-oz bottle).
