Sandwiches are acceptable in any and all forms — peanut butter and jelly, Italian combo, bacon-egg-and-cheese, you name it. But perhaps during the warmer months, the most superior sando of all is void of any bread or cheese: the ice cream sandwich. We traversed the county to find the best ice cream-cookie combo for your cravings.

There is no going wrong with combining the confections from The Snackery with equally rich ice cream from Penny Lick in Hastings. Keeping up with the theme of childhood whimsy, the bakery comes up with their own version of a Chipwich stuffed with vanilla ice cream and mini chocolate chips. Below that, the house-made thin mints plus mint chocolate chip ice cream for those who always want to live in Girl Scout Cookie season. The s’mores is a darling bite of graham cracker cookie, marshmallow ice cream, and chocolate, no campfire required. Finally, for the most adorable aesthetic, this crisped-rice sandwich is what our rainbow sprinkle dreams are made of.

Bona Bona Ice Cream

Known for his creative flavors and silky, torched Italian meringue, Nick Di Bona never disappoints with the combos he puts together. The Italian cookie from all angles was nostalgic if you grew up sneaking rainbow cookies under the table before dinner. This editorial staff was blown away by the cookie and brownie dough outside of the next sandwich. With the inside coated in chocolate, don’t count this next classic out. For all chocolate lovers, the brownie ice cream sandwich is the best of all worlds.

Longford’s Ice Cream

One thing you’ll always encounter at Longford’s — the inability to choose a flavor. We made it easy for you, by narrowing down some of our favorite handmade iterations. The salted caramel Oreo is a salty-sweet happiness journey. The cookie monster, packed with Oreos and chocolate chip cookie dough never forces you to settle for less. The graham slam feels like all the fun memories from camp but without the mosquito bites. Finally, the espresso nugget is the ideal and most fun way to buy time until it’s socially acceptable to have an espresso martini. Longford’s cookies are crunchy with just enough crumb, perfect to hold up against the density of the ice cream.

How could we leave out Hartsdale’s own Flying Saucer, a backyard barbecue staple for decades. Signature vanilla soft serve with the wafer cake hybrid holding it all in, these will bring out the kid in you. This classic hasn’t let us down yet.
