This Grilled Watermelon Pizza Recipe Is So Fresh

Chef and restaurateur David Burke, the force behind Red Horse in White Plains, likes to do something fun and unexpected for a barbecue. “I do a take on watermelon salad with feta and turn a seedless watermelon into a ‘pizza’,” says Burke. He encourages creativity with the ‘pizza’ toppings—this recipe includes his favorites.

Grilled Watermelon Pizza

Chef David Burke’s recipe for grilled watermelon pizza is an ideal summer side dish.

Ingredients

  • 1 small seedless watermelon, cut into ½ in thick slices

  • ¼ cup olive oil

  • 2 cups feta cheese

  • 1 cup pickled red onions

  • 1 cup unsalted walnuts, roughly chopped

  • ⅓ cup mint leaves, chopped

  • Drizzle of red onion brine

  • A few cracks of fresh pepper

Directions

  • Lightly brush one slide of each watermelon slice with olive oil.
  • Grill the watermelon slices oil side down, until char marks appear (about a minute).
  • Top with feta, red onions, and walnuts, and mint leaves. Lightly drizzle brine from red onions on top and finish with fresh cracked pepper.
