There’s a philosophy to the Little Beet Table: Create dishes with as few ingredients as possible. Then, treat those ingredients to be not only delicious, but nutritious too.
“If I put spinach on the menu, I’m going to add citrus to that dish to help bring out the full potential of the iron and so that your body will absorb a greater amount,” says Culinary Director Matt Aita. The idea is to offer a varied menu of vegetable-forward plates that are as wholesome as they are delicious.
Little Beet Table opened on Park Avenue in New York City in 2014. It was one of the city’s first exclusively gluten-free restaurants, a concept inspired by a family member who had celiac disease. “The idea is to be at the forefront of delicious, healthy cuisine,” says Aita. “We wanted it to be a safe haven, and it just grew from there.” Followed by the success of the New York City outpost, Little Beet Table opened a location in Chicago in 2016 and is now celebrating the opening of its newest location in Greenwich.
While the menu is focused, there are options for everyone. You can get steak and potatoes, but also have a non-dairy soup and vegan tacos.
A personal favorite of Chef Aita is the charred romanesco, which is brined, charred, and seasoned with a purée of mint oil, sunflower seeds, and other superfoods. “It’s a simple dish,” says Aita, “but the sauce and the way we treat the Romanesco really make a unique dish.” Other menu favorites include crispy salmon with seasonal greens, and sheep-milk ricotta topped with a rhubarb jam and mustard greens, served with a side of grilled, gluten-free bread.
Most unique, though, may be Little Beet Table’s cocktail menu, which showcases fruit-juice-forward, nutrient-dense drinks with ingredients like kale, clementine, turmeric, and basil. The Clementine & Turmeric is a forward-thinking cocktail of mezcal, clementine-turmeric syrup, lemon, and chia seed. There’s also a menu of house-made, non-alcoholic drinks like the LBT Palmer, made with black tea, grapefruit, rosemary, mint, and agave.
Little Beet Table was designed to provide a fun, vibrant, casual place for people to come and meet over a diverse menu that offers something for every appetite. When asked what’s next for the Little Beet Table family outside of the opening of its next location in Maryland, Atia says “I couldn’t say. There’s lots of talk of different locations but the plan is to have two new openings a year.”
