Flights Bar has shuttered, and in its place is 45-seat The Raconteur Bar & Kitchen (10 Marble Ave, Pleasantville; 914.769.4040; The concept is cheese and charcuterie, bar snacks (pimento cheese with hot pepper jelly and Saltines), and small plates (ancho-rubbed bacon) alongside a spirit-focused beverage program, including Spanish-style gin goblets and a vintage absinthe fountain. Chef/owner Michael Boulos is a Croton-on-Hudson native who has a restaurant-consulting business, Hudson River Hospitality.

Sample such drinks as the Tokyo Gin & Soda (left), with Suntory Roku Gin, Fevertree yuzu-lime soda, pink peppercorn, apple blossom, and lime, and the On Walden Frond (right), with Botanist Gin, muddled lemon and cucumber, and a toasted fennel seed rim.
