Lately, I’ve been haunting this modest, Chairman Mao-themed spot for this poetic dish in which the slight gaminess of tender, juicy lamb slices is perfectly set off by mouth-numbing Sichuan peppercorns; earthy cumin; and the fresh, herbal snap of cilantro leaves.
