The layers of carrot cake are a modified version of a cake Assue made when she worked at The River Café in Brooklyn. “I love it because it has great texture and is not overly sweet.”

Candied cranberry compote, rum raisin, or maple walnut ice cream and jasmine tea or Prosecco pair well with this carrot cake.
