Serves 8-12
Ingredients:
3 vine-ripened tomatoes, chopped
1 chipotle pepper in adobo sauce, minced
Large handful chopped fresh cilantro
1 small red onion, diced
2 Tbsp diced red radishes
Juice of one lime
Splash of olive oil
Salt and pepper to taste
Combine all ingredients in a mixing bowl. Let sit at room temperature for 1 hour.
Serve with your favorite tortilla chips — Garden of Eatin’ Blue Corn Tortilla Chips is suggested.
