Nothing’s quite as satisfying like the stuffed feeling after Thanksgiving dinner, but day-after leftovers certainly come close!
The favorite local grocer shared its recipe for a Black Friday breakfast that can’t be beat. Serves 6 to 8.
- 1 medium onion, chopped
- 1 cup of leftover turkey
- 1 cup of stuffing
- 1/2 cup of roasted vegetables
- 4 eggs
Preheat oven to 325°F.
Into a 9″x12″ baking pan, drizzle a small amount of olive oil. Add onion, turkey, stuffing, and vegetables and gently mix.
Create 3 ridges (every 3 inches) with the mixed ingredients that run the width of the pan; crack an egg between each of the ridges. Bake for 20 minutes. Serve with cranberry sauce.
