How can a burger without cheese be this good? Chef John Poiarkoff sources the meat from Brooklyn’s Happy Valley Beef for a patty that’s big on flavor. But the star of this burger show might just be the green-chili aioli, a tangy foil to the rich meat, with just the right amount of spicy kick. (We wouldn’t say no to another plate of those crispy fingerling fries, either.)
