Apropos Restaurant Welcomes Peter X. Kelly in Peekskill

Celebrity chef and founder of Xaviars Restaurants Group Peter X. Kelly has stepped into the role of culinary director of Apropos in Peekskill.

Chef Peter X. Kelly is a renowned figure in the Westchester culinary world. Recognized for his restaurants X2O in Yonkers and Restaurant X in Congers, Kelly’s unique take on contemporary American cuisine sets him apart and has earned him accolades in the media.

In his latest venture, Kelly will serve as Culinary Director of Apropos Restaurant and catering operations in Northern Westchester. Initial changes to the farm-to-table restaurant include a dining room revitalization, expanded wine selection, and elevated menu highlighting local ingredients. The dishes will be prepared by the team using European techniques with Asian embellishments.

The Abbey Inn and Spa and Apropos Restaurant serve as a premium lodging and dining destination in Peekskill. Nestled on a hillside, the 120-year-old abbey that houses the Michelin-rated restaurant offers breathtaking vistas of the Hudson River. The 2,183-square-foot Highlands Ballroom, within the former church of the Convent of St. Mary, can host wedding parties of up to 120 people.

At the restaurant, diners can expect to see reimagined dishes on the menu through small and large plates, as well as sides. New small plates include warm shrimp salad with avocado, champagne and truffles, fresh pappardelle ai quattro formaggi with rappini and San Marzano tomatoes, and tuna capriccio with Hudson Valley foie gras and pickled shallots.

For larger plates, added choices include filet of black bass “poché,” zucchini galette and brown butter spinach, Hudson Valley duckling with green peppercorns and hakurei turnips, and Murray’s chicken with savory bread pudding, agrodolce, and haricots verts.
