Since hitting the scene with its first pop-up in 2015, family-run bakeshop Peaceful Provisions has been first-and-only an exclusively vegan craft doughnut purveyor. As a magazine that typically believes the highest praise for vegan products is, “You can’t tell it’s vegan,” these doughnuts are infuriatingly good. And when the shop expands their operating hours starting September, you’re going to have even better access to these maddeningly addictive morning treats.
Back on June 7 (National Doughnut Day, naturally), Peaceful Provisions made the move from the occasional pop-up to a semi-permanent stand in the county’s north at the Peekskill Brewery. “The owners of The Peekskill Brewery, Kara, Keith and Morgan, graciously hosted us for various pop-up events that were very well attended,” says Peaceful Provisions co-founder Justine Soto. “Knowing that we were looking to have a steady base, ideally in Peekskill, they extended an extremely wonderful opportunity for us to have a pop-up doughnut shop within their brewery on the first-floor taproom.”
Justine, along with her sisters Brittany and Bridget, currently feed lucky locals four days a week with enormous, decadent pastries like the fan-favorite strawberry glazed, pistachio, chocolate marzipan, chocolate cookie dough, and seasonal treats like autumnal apple cider and the summery strawberry-sweet corn. Most range $4 to $5, with filled varieties running $6. Sweet and savory scones and cookies are also on the menu, now accompanied by fresh cold brew coffee from Peekskill Coffee House just up the hill, and three varieties of Freakin’ Vegan empanadas.
Early morning commuters — and bleary-eyed fans — can currently snag the delectable dough on Thursdays and Fridays from 7 a.m. to noon, Saturdays from 8 a.m. until noon, and on Sundays from 9 a.m. until noon … or until supplies run out.
Yes, demand really is that high. On our recent Sunday visit we watched as cookie dough, pistachio, and even the savory scone sold out by 9:53 a.m. Two more flavors were gone before the clock struck ten. The woman on line behind us told us that she and her husband (and infant) came up from Manhattan just to get the doughnuts and take a hike while they were here.
“It takes 45 minutes to get to any [doughnut shop] in Brooklyn, and they’re sold out within an hour. People are lining up at 4 a.m.,” she says.
For this exact reason, the Sotos are expanding the operation to include Wednesday hours beginning this September.
“Making the switch from a market vendor to a semi-permanent fixture has been interesting to say the least!” Justine says. “They’re not your average doughnuts in many regards, so in that sense increasing production is a little challenging,” she adds.
“We’re slowly honing-in on more appropriate production levels, and our goal is to eventually be open five to six days a week.” If that wasn’t enough reason to get excited, Justine also teases us with a few ideas the Soto sisters have been kicking around:
“We plan on having collaboration doughnuts with local businesses soon, so think beer-inspired doughnuts, kombucha sourdough doughnuts, hard apple cider doughnuts, and more.”
We’ll just start waiting on line now.
