Have you stopped by this Bronxville staple lately? If you prefer to dine vegetarian, odds are you might have overlooked it in your travels. While the guacamole could be a whole meal in and of itself, Blue Moon Mexican Cafe has recently promoted several no-meat dishes to star status.

Cauliflower Tacos
Sautéed with onions, corn, black beans, roasted red peppers, and their famous avocado hummus (did you know guacamole and hummus had a beautiful child together?), these cauliflower tacos have crunch, spice, and sweetness, everything you look for in a good taco. They’re wrapped in soft white tortillas, and come with rice and either black or refried beans, which, not beinmade with lard, and therefore some of the only veggie-friendly refried beans around. Vegans, just ask your server to hold the cheese crumbles and you’re good to go.

Zucchini Nachos
Thick, diagonal cuts of grilled zucchini, backed with gooey muenster cheese and black beans, with pico de gallo, avocado, and a little cilantro, these nachos are crisp and crunchy and the perfect healthy counter to your junk food cravings. Order a plate for the table as an appetizer, or hoard them all to yourself, they’re that good.

Vegetarian Chili
Sometimes the best veggie dish is one you wouldn’t even notice was vegetarian. Such is the Blue Moon Vegetarian Chili. It’s classic three-bean chili, loaded with thick chunks of carrot, zucchini, green and red peppers, and onion, but it’s just flat-out great chili. Restaurant manager Dave Vazquez, a proud meat-eater, actually prefers over their other varieties. “I just like the taste better.” Truly, the highest praise a veggie dish can earn.
And yeah, definitely grab an order of chips and guacamole while you’re at it.
