Situated on 16 acres in Ossining, Fable: From Farm to Table has just finished its first year in operation, providing Westchester with tomatoes, cucumbers, herbs, and more. The property, previously known as Sundial Farm, was taken over by Tom Deacon in 2015. After growing herbs, greens, and tomatoes in his backyard for years, Deacon was inspired to open Fable due to “the lack of fresh, locally grown produce in Westchester County,” he says.

The farm, which starting yielding its crops last fall, produces jarred herbs and spices such as parsley, thyme, and red pepper flakes, as well as veggies like kale, cucumbers, and more than ten varieties of tomatoes. Free-range eggs are also offered, thanks to several breeds of hens that Deacon raises. Fable also sells all-natural soaps infused with basil, sage, and rosemary — talk about smelling delicious.
“One feature of the farm that has drawn a lot of interest has been our hydroponic greenhouse,” says Deacon, who received farmer’s training from Stone Barns Center in Pocantico Hills. The greenhouse allows Fable to grow its herbs and leafy greens all year-round. “It’s amazing to walk through a foot of snow in January and enter a warm 70-degree greenhouse that smells of delicious basil,” he says.

In addition to selling honey in 2017, Deacon is looking to expand the farm, which sparked the creation of Fable’s Barnraiser Campaign. Donations will go towards enlarging the chicken field, constructing beehives, and building a cold storage room. The campaign runs now through December 9, and those who wish to help out can donate by visiting their fundraiser site.
Purchase Deacon’s farm-fresh offerings at the property’s farm stand or area farmers’ markets including New Rochelle, TaSH (Tarrytown and Sleepy Hollow), and the market at New York-Presbyterian/Hudson Valley Hospital in Cortlandt Manor. Their herbs can also be purchased at Turco’s in Yorktown Heights.
