When Chef/owner Tom Costello was diagnosed with celiac disease several years ago, he took it in stride, overhauling the menu at Thyme to make it mostly gluten-free. The menu has remained that way since, featuring luxurious dishes like Costello’s signature crab cake, diver scallops on truffled Parmesan risotto, and pork tenderloin with pineapple salsa.

With salads, cheeses, and charcuterie comprising a large swath of the menu at this chic Hastings-on-Hudson wine bar, many of the offerings are naturally gluten-free. Not surprisingly, the menu at his Modern Cantonese restaurants is largely sans gluten, including the char siu meatballs with beet-apple-ginger purée, stir-fried smoked tofu, arctic char with Cantonese charmoula, and the house fried rice.
