There are big hopes for this new Sleep Hollow eatery.
On the ground floor of the River House residences in Sleepy Hollow, Mike Kaphan, chef and co-owner of Purdy’s Farmer & the Fish in North Salem, is preparing for the debut of his newest project. More than two years in the making, the long, narrow space is small, with just 45 seats (plus another 24 on the river-facing patio) that sidle up to the open kitchen or face outward overlooking the river, just a few yards away.
Despite its size, Kaphan has big hopes for Hudson Farmer & the Fish. Much of the produce comes from Purdy’s four-acre farm, and fans of the North Salem location will recognize dishes like scallop salad with fingerlings, bacon, and runny egg; clam chowder; an extensive raw bar; and lobster rolls.

But Hudson F&F will also have its own identity: A line of kettle steamers churns out bowls of mussels, and a pizza oven does thin-crust pies with garlicky white clams. Behind the bar, 10 siphons pour house-made sodas flavored with fresh ginger or real cola nut, and Kaphan has partnered with local breweries to create beers from hops and herbs grown at the farm.

“I’ve jumped in,” he says. “I could have just flipped this into another Purdy’s, but as a chef, you want to mix it up and have a little fun. We’re going to see where it goes.”
