Dig Inn to Rye Brook’s New Veggie-Centric, Farm-to-Counter Restaurant

The fast-casual micro-chain serving marketbowls and quinoa waffles opens its first suburban location.

Dig Inn, with multiple locations in New York City (and another in Boston), just opened in Westchester, the restaurant’s 14th location nationwide, with more planned for other U.S. cities.

At Dig Inn, Westchesterites can expect a true farm-to-counter experience, even at a fast-casual chain. They source their ingredients from nearby farms within a 300-mile radius — including many in New York — and align with producers who share their views on sustainable farming. What you won’t see at any of their restaurants are artificial flavors, sweeteners, or hydrogenated fats, and their meat — yes, they do have some meat offerings — is free of growth hormones and harmful antibiotics.

The Rye Brook location is reminiscent of a mini food hall with its three stations; a coffee shop/food pickup area (with free Wi-fi), another area where you place your food orders, and a chef’s table if you care to get up-close and personal. The space also boasts an open kitchen, and plenty of seating in both the trendy looking coffee area and in the dining room in the back.  

The seasonal menu, put in place by Dig Inn’s culinary director Matt Weingarten, features plenty of healthy and flavorful options to choose from. In the morning, try one of their seasonal breakfast bowls, the almond butter or avocado toast, a quinoa waffle, parfaits, fresh pastries, or The Egg Sandwich (over easy egg on brioche with lemon zest ricotta), described by Chef Weingarten as “a pretty bangin’ egg sandwich!” A complement to breakfast service, or to get you caffeinated throughout the day, is Dig Inn’s coffee selection. They have everything from a basic cup of coffee to Cortados, Espressos, and even iced lattes and iced matcha lattes.

For lunch or dinner, the Marketbowls are Dig Inn’s signature. These customizable creations start with picking one base ingredient (brown rice, miso noodles, farro, or greens), two market sides (various seasonal vegetables and fruits), and one protein (tofu, charred chicken thigh, herb roasted chicken breast, steak, salmon, and more). Those opting for a more intimate experience can sit at the 10-seat chef’s table where you can order toasts with spreads, vegetable charcuterie, and cheese boards. Require an adult beverage? They do have a few beers and hard ciders, and a handful of wines to choose from. If you’re bringing the kids, the “Little Digs” menu offers half portions of their bowls, waffle bites, mac & cheese and meatballs, and other child-agreeable options.

If you go, Dig Inn won’t hurt your wallet too much (and if you consider the ingredient quality, the prices are certainly reasonable). Nothing on the breakfast menu will run you more than $11, with most single items sitting in the $6-$8 range. For lunch or dinner, bowls start around $10 and can go to about $13 or more depending if you add extra sides.

Dig Inn will serve breakfast Monday to Friday from 7 am – 10:30 am, Saturday and Sunday from 9 am – 10:30 am; lunch and dinner is available daily from 10:30 am – 10 pm.
