Farm-to-table is an approach many restaurants claim, but which only a percentage carry through in meaningful ways. RiverMarket, a Crabtree’s Kittle House sibling, is one such restaurant that truly integrates locally sourced and sustainable ingredients such as Stone Broke Farm (Warnerville, New York) beef; Hemlock Hill Farm (Cortlandt Manor) pasture-raised chicken; and Hudson Valley honeycomb, foie gras, lamb, and duck. The resulting fare is fresh, bright, and, of course, delectable. There are also sustainable and often biodynamic wines, plus a small market with artisanal (and local, of course) jams, maple syrup, dairy, meat, and flowers for sale.
